SkinnyMint Collab: My most favourite breakfast waffles

As they say, the best things come in 6s with all kinds of garnishes on top. Hehe.

When I started my collaboration with SkinnyMint then I would have never ever guessed that combining tea into pancakes/waffles would actually make such a difference. Yet the more I cooked, the more I was amazed at how perfectly it suits the food. 

These ones here turned out to be my most favourite breakfast waffles yet. Maybe there was something in the air, maybe it was the crappy weather, but somehow I could not help myself from devouring these one at a time.

Ingredients

300 ml boiling water + 1 SkinnyMint tea bag

200 g cake flour

200g spelt flour

1/2 tsp powdered vanilla

1 tsp baking powder

pinch of salt

100g organic brown sugar

Toppings:

Raspberries, oranges, bananas, dark chocolate, chocolate sauce etc. 

Method

Make the tea by combining the boiling water and tea bag. Set aside to infuse and cool.

In a bowl, combine the flours, vanilla, sugar, salt and baking powder. Once the tea is cool, mix it into the dry ingredients to form a thick but pourable batter.

Heat up your waffle maker, oil it well, and ladle the dough in. Cook until crispy and repeat with the rest of the dough. Serve with whatever toppings you like. Enjoy!
