SkinnyMint Collab: Chocolate & vanilla two-toned waffles

Happiness came to my doorstep a few days ago, in the form of a package from SkinnyMint. Inside? Four packets of tea, a couple of cute little bags and other nitty-gritty, all beautifully packaged.  

The teas smelled AMAZING from the first whiff - fresh, citrusy, herbal. Needless to say I was beyond excited to try them out. 

After a nice cuppa with the morning papers, I got to it. I'd been playing with the idea of two-toned waffles for a while now, and what better excuse to make them? Chocolate & vanilla, the perfect pair, with ingredients that everyone has at home. Add a little bit of fresh, herbal tea to the mix and voila. Little did I know that these would turn out the be one of the best waffles that I had ever had! 


130 g all-purpose flour

30 g quick-cooking oats

large pinch of salt

35g organic brown sugar

2 tsp of baking powder

1 large ripe banana, mashed

100 ml SkinnyMint morning tea

150 ml plant-based milk

1 tbsp chia seeds

25 ml melted coconut oil or vegan butter

1/2 tsp vanilla

1,5 tbsp cocoa powder


50g chocolate, melted over a water bath

50g raspberries

handful of pomegranate arils




Preheat the waffle iron and spray with cooking spray.

Combine the flour, oats, salt, sugar and baking powder in a bowl and mix well. In another bowl, combine the milk, tea, mashed banana, vanilla, chia seeds and coconut oil. Let sit for 5 minutes, then add to the dry ingredients and mix well. Divide the batter into two and add the cocoa powder to one half. 

Ladle the vanilla batter to one side of the waffle iron and the chocolate one to the other. Cook for 4-5 minutes, until crispy. Repeat with rest of the batter. Serve warm with melted chocolate, raspberries and pomegranate arils. Enjoy!
