SkinnyMint Collab: CHICKPEA & ZUCCHINI WAFFLES

As much as I love sweet, crispy waffles, every once in a while I crave for savoury waffles that just hit the spot. 

These ones are like that. Full of protein and topped with vitamins, these waffles are fresh, crispy, savoury - everything one could wish for. I enjoyed mine topped with avocado, a bit of vegan mayo (you can't be toooo healthy, right?) and side of SkinnyMint tea, one that I have been particularly fond over for the past month and it actually makes me kind of sad to see the packet almost empty. If you are on the search for a good (detox) tea then SkinnyMint is very very good, tasty and healthy option!

serves 3-4

total time: 30 minutes

Ingredients

75g chickpea flour

250 ml unsweetened plant-based milk or water

100 ml light coconut milk

150g unbleached organic all-purpose flour or spelt flour

1 tsp salt

1 tsp baking powder

160g grated zucchini

 

Toppings:

1 ripe avocado, finely sliced

1-2 tbsp of vegan mayo or cashew cream cheese

handful of fresh cilantro

freshly ground black pepper

 

 

 

 

 

Method

Heat your waffle iron and oil well. 

Whisk together the chickpea flour, plant-based milk/water and coconut milk until there are no lumps. In another bowl combine the flour, salt and baking powder, then fold in the chickpea mixture. Mix until combined and then add the grated zucchini. The batter should be thick but pourable - add more milk if necessary. 

Ladle the batter into the waffle iron and cook until crispy and golden. Serve with avocado, freshly ground black pepper, coriander a dollop of vegan mayo and a large cup of SkinnyMint tea. Enjoy!
