Skinnymint Collab: Coconut & lemon pancakes with raspberries
Never would I have thought that my favourite pancakes would be ones that were made for the purpose of a collaboration with a company. Ever! But I'm honestly telling you right here - these pancakes are to die for.
I'm guessing that it is the perfect match between the creamy coconut and the hint of lemon that makes it so perfect for. Combined with fresh raspberries and a drizzle of honey/agave- heavenly!
And, as always, these are super simple to make with few ingredients that most (healthy/vegan) foodies have already at home. I made these, ate them (with a side of SkinnyMint morning tea - my faaaaaave) , and made another batch for the beau before he woke up. :)
for 1-2 people
total time: 20 minutes
Combine the flour, baking powder, sugar and salt in a bowl and mix well. In another bowl, combine the coconut milk, tea, chia seeds and oil. Mix the two bowls together using a spatula. The batter should be thick but pourable so add a bit more milk if needed.
Place a large pan on medium-high heat and ladle the batter onto the pan. Cook for 2-3 minutes until bubbles surface, then flip and cook for another minute. Serve warm with fresh raspberries and honey. Enjoy!
200g all-purpose flour
1 tsp baking powder
50g organic brown sugar
pinch of salt
zest from 1/2 lemon
400 ml light coconut milk
100 ml SkinnyMint morning tea
1 tbsp chia seeds
1 tbsp vegetable or coconut oil
50g fresh raspberries
2-3 tbsp of agave or honey
Coconut flakes, optional
