Protein-packed Acai bowls
From the colour to the texture and flavour, a good acai bowl has it all. Not to mention it packs an incredible nutritious punch! Add some vegan pumpkin seed protein powder to the mix and you've got yourself a breakfast/lunch/dinner/dessert that fills you up and makes you feel oh so good.
The first time I had an acai bowl was years ago, but this seems to be a trend that keeps on living. And for a good reason! It is packed with antioxidants, polyphenols and healthy fats. This time I've combined it with a pumpkin protein powder from OMG! Superfoods which is vegan, gluten free, organic AND has more protein per gram than most traditional protein powders. Not to mention the subtle nutty taste is not over-powdering at all so it goes well with most things you add it to - and that is a BIG win in my humble opinion because I've tasted some vegan protein powders that are pretty damn intense.
Without further ado, this recipe is a super flavourful twist on your classic nice cream bowl. Serving in coconuts is optional! ;)
For the Acai bowls:
- 2 frozen bananas
- 2 cups frozen strawberries, blackberries or raspberries
- 1 cup almond milk, more if needed
- 2 tbsp almond butter
- 2 tbsp Pumpkin Protein Powder
- 4 tbsp Acai powder
- 1-2 tbsp agave syrup, if needed
- Fresh blueberries
- Chia seeds
- Nut butter
- Coconut flakes
Place all the ingredients for the acai bowl in a high-speed blender/food processor and blend until smooth. Transfer to bowls and top with your choice of toppings. Enjoy!
