FLUFFY PEANUT BUTTER PANCAKES
Perfect for a summer’s morning, these fluffy peanut butter pancakes are super easy to make, and taste better than you could imagine! They’re quick to whip-up, amazingly nutritious (especially when served with fresh fruits and berries) and work as a quick snack, as well as a hearty tummy-filler.
250 ml plain flour
1,5 tsp baking powder
75 ml light brown sugar
275 ml plant-based milk
25ml coconut oil
75 ml smooth peanut butter
Toppings: berries, fruits, coconut flakes
Place the flour, baking powder and sugar in a bowl and mix through. In another bowl, whisk (or blend) together the plant-based milk, peanut butter and oil. Combine the two bowls and mix well.
Place a pan over medium-high heat and drop the batter on the pan. Turn when bubbles appear in the centre of the pancake. Serve with yummy fruits and coconut flakes! Enjoy!
