Maqui berry smoothie bowls with crunchy stove-top granola
If this smoothie bowl doesn't win you over with the colour and look, it will most definitely do it with the taste. So fresh and fruity that there really is no comparison.
The intense berry flavour comes from one of my favourite superfoods - Maqui berry powder. The actual berry is of a deep purple colour, hence the beautiful colour of this smoothie too. It is also super high in antioxidants.
The topping choices for the smoothie bowls are of course endless, but I thought I'd treat you with one of my favourite quick recipes for a stove-top granola. This is for those quick mornings when you have run out of baked granola but need that little bit extra on your smoothie. Don't worry, I've got you sorted.
1/2 cup rolled oats
2 tbsp raw buckwheat
1 tsp flax seeds
2 tbsp maple syrup
1 tbsp organic natural coconut oil
pinch of flaky sea salt
3 frozen bananas
3 tbsp MyProtein Maqui Berry Powder
1 cup unsweetened almond milk
200g fresh strawberries
1-2 tbsp maple syrup, optional
Handful of fresh blueberries, raspberries and figs, for garnish
Place the oats, buckwheat, flax seeds, maple syrup, coconut oil and salt in a bowl and mix well. Transfer to a pan and cook over low heat for 5-10 minutes until golden and crispy. Let cool.
Combine the frozen bananas, maqui berry powder, almond milk, maple syrup and strawberries in the jug of a blender and blend until smooth. Transfer to a serving bowl, then top with the granola and berries. Serve immediately. Enjoy!
