If you like mangoes then you are gonna LOVE this recipe.
I absolutely adore these. They are flavourful, soft and creamy. After finishing breakfast I just ate them like cookies as long as they lasted (not long :().
The only prerequisite – you need to have super sweet, fully ripe mangoes. Got them? Then let’s make these!
1 large mango
1 tbsp chia seeds
150 ml coconut milk
2 tbsp coconut oil
200 ml flour
1 tsp baking powder
Blend together the mango, banana, chia seeds soaked in 50 ml water, coconut milk, coconut oil and sweetener. In another bowl, combine the flour, baking powder, cinnamon and vanilla. Combine the two bowls and add a bit of almond milk if the consistency is too thick. (Insider tip – if the mixture gets lumpy the just blend it for a couple of seconds). Make pancakes from the batter on a hot pan and fry until golden. Enjoy!
