Chocolate pudding cups
This chocolate pudding is one of my all-time favourite quick desserts. Super luscious and creamy, with a deep chocolate flavour. I dare you to try find the avocado in it!
For the recipe I used organic cacao powder from OMG! Superfoods. It is easily one of my favourite things to use in the kitchen because it is so versatile and, also, who doesn't like chocolate?
This dessert comes together in literally minutes and it will probably be gone in the same amount of time. You can keep this in the fridge for a day or two too if you want to make this in advance.
2 medium-sized ripe avocados
3/4 cup coconut cream
1 cup maple syrup or 5-6 Medjool dates
1/2 frozen banana
1 tbsp almond butter
1/3 cup OMG! Superfoods Cacao powder
1/2 tsp vanilla
1/4 tsp salt
almond or peanut butter
blueberries (or other berries)
Place all the ingredients for the pudding in a blender and food processor and blend until smooth. Taste and adjust sweetness. Place in serving bowls and top with cacao nibs, peanut butter and blueberries. Place in the fridge for a few hours if you want it to firm up a bit.
