BEETROOT BURGERS with black garlic mayo & an apple lemonade

The northern hemisphere is currently at the end of their summer, and what better way to send it off than with a proper veggie barbecue with some ice cold lemonade. I made these beetroot patties with black garlic mayo and loads of veggies on top. Delicious!

 

Ingredients

For the beet patties:

3 small beets, shredded

350ml kidney beans, cooked

250ml mushrooms, chopped

250ml cooked rice

1/2 yellow onion, finely chopped

1 garlic clove, finely chopped

50ml pumpkin seeds

thyme

 

For the black garlic mayo:

100 ml vegan mayo

2 black garlic cloves, finely minced

1-2 tbsp lemon juice, more if needed

salt, to taste

freshly ground black pepper, to taste

 

To serve:

Burger buns, halved and toasted

Yellow tomatoes, sliced

rocket

avocado, thinly sliced

oven baked potato wedges

 

Recipe

For the patties:

It is best to make these a day ahead so they can firm up before grilling.

Heat oil in a skillet, add the minced onion, garlic, beets, thyme and mushrooms and sauté for 30 minutes until the beets are mushrooms are tender. Add the cooked rice,BEANS and pumpkin seeds, fry for a couple more minutes, then season with salt and pepper. It’s okay to taste this to adjust the seasoning!

Transfer the mixture to a food processor and blitz a couple of times until everything is combined but is still kind of coarse. For the mixture into patties and refrigerate until needed.

If cooking on a pan, add some oil and fry for 5 minutes on both sides until golden. If using a grill, spread some oil on the patties and place on the grill until golden, then flip over.

For the mayo:

Mix together the mayo and black garlic. Season it with salt, pepper and lemon juice.

To serve:

Toast the burger buns with some oil on high heat. Put a little bit of mayo on the base, followed by the patty, then the tomato, avocado and rocket, seasoning in between vegetable layers. Finish with the top of a toasted bun. Enjoy!
