The idea is simple - get a bunch of bagels, cut them in half, toast and go crazy with the toppings.
This is without a doubt one of my favourite ways to have breakfast/brunch!
What you need:
3 bagels, cut in half and toasted
1 Avocado, thinly sliced
1 radish thinly sliced
3 tsbp sun-dried tomato hummus (or any other)
2-3 sundried tomatoes
3 tbsp macadamia butter
2 fresh figs
3 tsbp cashew cream cheese
handful of baby spinach
4 cherry tomatoes, quartered
Arrange the avocado on one bagel and top with radishes, the other one with smoked paprika and sesame seeds.
For the cream cheese bagel, smear the cashew cream on the bagel and top with spinach and tomatoes.
For the sweet bagel, smear with macadamia butter and top with figs and dark chocolate.
