AVOCADO HUMMUS with a pinch of cayenne & tortilla chips
Beautiful avocado hummus, spiced up with a pinch of cayenne. This is definitely the most delicate of hummus spreads and pairs well with crispy tortilla chips.
1 large ripe avocado
1 can chickpeas
Juice from 1 lemon
1 garlic clove
1 tbsp of tahini
Pinch of cumin
1 tbsp olive oil + more for chips
50 ml ice cold water
Salt & pepper
3 tortillas, cut into bite-sized pieces
Place the pieces of tortilla on a baking sheet lined with baking paper. Drizzle with olive oil, season with salt and pepper, mix through and spread out. Bake at 190C for 10 minutes or until golden.
To make the avo hummus, blend the olive oil, tahini and garlic clove. Add the avocado, chickpeas, lemon juice and ice cold water, so that it blends. If still too thick, add a bit more water, season with salt, pepper, cumin and cayenne – depending on how hot you like it.
When smooth and creamy, place in the fridge for the flavour to steep in.
Serve with tortilla chips & veggies. Enjoy!
